Soft Boiled Eggs and Toast Soldiers Recipe

Slotted Spoon

Egg cups for eggs

1 or 2 (3 if you’re really hungry) fresh eggs per person

Several slices (depending on preference) of bread per egg

Butter for spread on bread

Salt and pepper

  • Put several inches of water into saucepan and place on stove to boil. Add a good pinch of salt to prevent the egg shells from cracking
  • When water is boiling rapidly, use a slotted spoon and gently lower each egg into the water, releasing it slowly so it doesn’t hit the bottom of the saucepan and crack. When all the eggs are in the saucepan set a timer for 3 minutes.
  • This is for firm whites and runny yolks. If you want the yolks more well done, then set the timer for 4 minutes. At 5 minutes the yolks will be firm and you won’t be able to dip your toast soldiers into it
  • While the eggs are on timer, put the bread in the toaster, and when it’s done, butter it and slice each piece into three or four narrow fingers – these are your soldiers. (If you make them too fat they won’t fit into your egg for dunking!)
  • To serve place an egg in the egg cup and the spare egg beside it, and then add a pile of toast. Use your knife to tap the side of the egg and then chop off just the top. Now you can season and use your toasted soldiers to dunk into the revealing the soft, runny yolk.
